Description

This family-style pizza replaces traditional dough with a baked zucchini crust, then layers it with a rich beef and tomato topping, fresh vegetables and a blend of mozzarella, cheddar and Parmesan cheeses for a satisfying meal.

  1. Preheat the oven to 400�F (200�C). Lightly grease a large baking sheet or pizza pan.
  2. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. Combine the zucchini with the beaten eggs, half of the mozzarella cheese and half of the cheddar cheese. Mix until evenly combined.
  4. Spread the mixture evenly over the prepared baking sheet to form a pizza crust.
  5. Bake for 10 minutes, or until the crust is just set.
  6. Meanwhile, heat a skillet over medium heat. Add the garlic, salt and ground beef, breaking the meat into small pieces as it cooks.
  7. Add the chopped onion and continue cooking until the beef is browned and the onion is softened. Drain any excess fat.
  8. Stir in the tomato sauce and oregano and simmer for 2 to 3 minutes.
  9. Spread the meat sauce evenly over the baked zucchini crust.
  10. Arrange the sliced green pepper and mushrooms over the top.
  11. Sprinkle with the remaining mozzarella and cheddar cheeses, then finish with the Parmesan.
  12. Reduce the oven temperature to 350�F (175�C) and bake for about 30 minutes, or until the cheese is melted, bubbling and lightly browned.
  13. Allow the pizza to rest for 5 minutes before slicing and serving.
