Cut the zucchini crosswise into even rings.

Heat the olive oil in a large frying pan over medium heat.

Working in batches if necessary, fry the zucchini rings until lightly browned and tender on both sides.

Remove the zucchini from the pan and arrange it on a serving dish.

Add the chopped onions to the pan and saut� until soft and translucent.

Add the chopped tomatoes and bell pepper. Season with salt and black pepper.

Continue saut�ing until the tomatoes and pepper are soft and the mixture has thickened slightly.

Spoon the cooked vegetable mixture over the zucchini rings and serve warm.
