  1. In a small bowl, combine yogurt, mayonnaise, sun-dried tomato paste, minced garlic, and a pinch of salt and pepper to make the Sunset Sauce. Set aside.
  2. Preheat grill to medium-high heat.
  3. Trim the white tendon from each turkey tenderloin by cutting along the sides and discarding the strip.
  4. Cut each tenderloin partway through the center and open like a book to butterfly it, flattening slightly for even cooking.
  5. Season turkey with chili powder, salt, and pepper.
  6. Spray a large sheet of aluminum foil with nonstick cooking spray and pierce several times with a knife. Place bell pepper and onion rings on the foil and spray lightly with cooking spray.
  7. Grill turkey tenderloins for about 4-5 minutes per side, until browned and cooked through (internal temperature of 165&# 194;°F).
  8. Place the foil packet with vegetables on the grill alongside the turkey. Cook for 8-10 minutes, turning once, until vegetables are tender and charred.
  9. Split the french bread loaves in half horizontally. Toast the cut sides lightly on the edge of the grill or a skillet.
  10. Slice the cooked turkey tenderloins into thin strips.
  11. Assemble sandwiches by placing turkey strips, grilled vegetables, cheese slices, and avocado on the bottom halves of the rolls.
  12. Spread the Sunset Sauce on the top halves of the rolls, close the sandwiches, and serve immediately.

The Sunset Sauce can be made up to 2 days in advance and stored in the refrigerator in an airtight container. Let it come to room temperature before spreading for easier application.
