Ingredients

Directions

  1. Heat 2 tablespoons of oil in a 1.5 to 2-quart saucepan over medium heat.
  2. Add the chopped onion and sauté until tender but not browned, about 5 minutes.
  3. Stir in the water and dried split peas, then bring the mixture to a boil.
  4. Boil for 2 minutes, then remove from heat, cover, and let stand for 30 minutes.
  5. Return the pan to medium-high heat and bring back to a boil.
  6. Cover, reduce heat to low, and simmer for about 20 minutes, or until peas are tender.
  7. Cool slightly, then drain the peas, reserving some of the cooking liquid.
  8. Transfer peas to a food processor or blender and puree, adding reserved liquid as needed to reach a smooth, dip-consistency.
  9. Transfer the pureed peas to a mixing bowl.
  10. Stir in the chopped tomatoes, green chiles, minced garlic, lemon juice, cilantro, cumin, and the remaining 1 tablespoon of oil.
  11. Season to taste with salt and a few drops of Chinese chili oil for heat.
  12. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  13. Preheat oven to 350ðF (175ðC).
  14. Split pita breads in half and cut each half into 6 to 8 wedges.
  15. Arrange pita wedges on a baking sheet and bake for 5 to 10 minutes until crisp and light brown.
  16. Serve the chilled dip in a bowl alongside the warm pita wedges.
