  1. Grease a shallow 11" x 7" baking pan with butter and line the bottom with parchment or waxed paper.
  2. Place honey, butter, and chopped chocolate in a large heatproof bowl.
  3. Set the bowl over a pan of gently simmering water, ensuring the bottom of the bowl does not touch the water.
  4. Stir occasionally until the butter and chocolate are completely melted and the mixture is smooth.
  5. Remove the bowl from the heat source.
  6. Stir all but 1/4 cup of the muesli into the honey-chocolate mixture until evenly coated.
  7. Spread the mixture into the prepared pan, smoothing the top with the back of a spoon.
  8. Sprinkle the remaining 1/4 cup of muesli evenly over the top, pressing gently into the surface.
  9. Refrigerate for 1 to 2 hours, or until the bars are firm and set.
  10. Carefully lift the set mixture out of the pan using the parchment paper edges.
  11. Remove the parchment paper from the bottom.
  12. Cut the slab into 8 even squares.
  13. Cut each square in half diagonally to yield 16 triangular cookies.
