Grease a shallow 11" x 7" baking pan with butter and line the bottom with parchment or waxed paper.

Place honey, butter, and chopped chocolate in a large heatproof bowl.

Set the bowl over a pan of gently simmering water, ensuring the bottom of the bowl does not touch the water.
