Description

This authentic New York-style cheesecake is the epitome of decadent dessert, featuring a dense, velvety texture and a profound tangy richness. The secret lies in the generous use of cream cheese and sour cream, which create a luxuriously smooth mouthfeel that melts on the tongue. A buttery graham cracker crust provides a necessary crumbly contrast to the soft filling. Best served chilled, this cake holds its shape beautifully and offers a sophisticated finish to holiday dinners or special celebrations. Ingredients

Directions

  1. Preheat your oven to 325&# 194;°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup of the sugar, and 1/4 cup of the melted butter.
  3. Mix until the crumbs are evenly coated and resemble wet sand.
  4. Press the crumb mixture firmly and evenly into the bottom of an ungreased 8 or 9-inch springform pan to form a compact crust.
  5. Break the cream cheese into small chunks to allow for easier blending.
  6. In a food processor or blender, combine the sour cream, remaining 1/2 cup of sugar, eggs, and vanilla extract.
  7. Blend on medium speed for about 1 minute until the mixture is uniform.
  8. Add the cream cheese chunks to the blender.
  9. Blend until the mixture is completely smooth and free of lumps.
  10. With the machine running, slowly pour in the remaining 2 tablespoons of melted butter through the feed tube.
  11. Pour the cream cheese filling over the prepared crust in the springform pan.
  12. Bake in the lower third of the oven for 45 minutes, or until the edges are set but the center still jiggles slightly.
  13. Remove the cheesecake from the oven and switch the oven setting to Broil.
  14. Carefully place the cheesecake under the broiler and watch closely until the top develops attractive spots of light brown.
  15. Remove from the oven and allow to cool completely at room temperature.
  16. Refrigerate for at least 4 hours, preferably overnight, to allow the cheesecake to set fully.
  17. Run a knife around the edge to loosen before removing the springform ring.
  18. Slice into small wedges and serve chilled.
