  1. Preheat the oven to 350&# 194;°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the cottage cheese, beaten eggs, chopped parsley, and salt. Mix thoroughly until smooth and well incorporated.
  3. Unroll the phyllo dough and cover all but the top sheet with a damp towel to prevent drying out.
  4. Cut the top sheet of phyllo dough in half crosswise to create two rectangles.
  5. Working with one rectangle at a time, brush lightly with melted butter.
  6. Fold the rectangle in half lengthwise, then fold it in half again to create a long, narrow strip.
  7. Place about 1 tablespoon of the cheese mixture at one end of the strip.
  8. Fold one corner over the filling to form a triangle. Brush the exposed dough with more melted butter.
  9. Continue folding the dough over itself in a flag-style triangle pattern, brushing each new layer with butter.
  10. Place the finished triangle on the prepared baking sheet. Repeat with remaining phyllo sheets and filling.
  11. Bake for 15 to 20 minutes, or until the pastries are golden brown and crisp.
  12. Allow to cool slightly before serving warm or at room temperature.
