  1. Trim excess fat from chicken breasts and pound them to an even thickness of about 1/4 to 3/8 inch.
  2. Spread flour on a plate or shallow dish for dredging.
  3. Heat olive oil and butter in a large skillet over medium-high heat until the butter foams and subsides.
  4. Dredge each chicken breast in flour, shaking off excess, and carefully place them in the hot skillet.
  5. Cook chicken for 2-3 minutes per side, adjusting heat to prevent burning, until golden brown.
  6. Season each breast with salt and black pepper immediately after turning.
  7. Transfer cooked chicken to a platter and cover with foil to keep warm.
  8. If there is excess fat in the skillet, tilt the pan and spoon off all but about 2 tablespoons.

  10. Pour in 1/2 cup of Marsala wine and simmer, scraping up any browned bits from the bottom of the pan, until reduced by half.
  11. Add the remaining 1/4 cup of Marsala wine and continue to reduce for another minute or two.
  12. Whisk in the remaining cold butter until the sauce becomes glossy and slightly thickened.
  13. Return chicken to the skillet briefly to coat in sauce, or spoon sauce over chicken on serving plates.
  14. Serve immediately while hot.
