  1. Preheat oven to 350°F (175°C).
  2. Prepare the shortcrust pastry and chill in the refrigerator until firm.
  3. Clean and slice the leeks thinly; peel and chop the onion.
  4. In a large bowl, combine chopped chicken, ham slices, leeks, onion, salt, pepper, and ground nutmeg.
  5. Layer the mixture in a deep 1-1.5 quart baking dish.
  6. Pour the chicken stock over the layered ingredients.
  7. Roll out the chilled pastry on a floured surface to fit the dish.
  8. Dampen the edges of the baking dish with water.
  9. Place the pastry over the pie, pressing edges firmly to seal.
  10. Crimp the edges with a fork to secure.
  11. Cut a small hole in the center of the pastry lid.
  12. Roll scraps into a leaf or rosette shape and set aside.
  13. Brush the pastry with milk for a golden finish.

  16. Remove pie from oven and carefully lift the rosette from the center hole.
