Description

These crunchy chickpea snacks are a fantastic low-fat alternative to potato chips. By slowly drying seasoned chickpeas in a dehydrator or low oven, you achieve a satisfying texture that pops with flavor. The blend of turmeric, garlic, and onion powder creates a warm, aromatic profile, while a hint of artificial sweetener balances the savory spices. Perfect for movie nights, office lunches, or as a guilt-free party appetizer, these snacks require patience but reward you with an addictive, crispy treat. They are vegan, gluten-free, and packed with protein and fiber.

Ingredients

Directions

  1. Sort through 1/2 lb of dried chickpeas to remove any stones or damaged beans.
  2. In a small bowl, mix 1 tablespoon of the seasoning mix (salt, onion powder, garlic powder, mustard, turmeric, peppers, cayenne) with the artificial sweetener and set aside for later.
  3. Place the dried chickpeas in a large bowl or container.
  4. Add 5 cups of water, 1 cup of apple juice, and 1 cup of vegetable stock to the chickpeas.
  5. Stir in the remaining seasoning mix (unsweetened) into the soaking liquid.
  6. Cover the container and refrigerate overnight to allow the chickpeas to soak and expand.
  7. The next day, transfer the chickpeas along with the seasoned soaking liquid into a large 5-quart pot.
  8. Bring the mixture to a boil over high heat, then reduce heat to maintain a simmer.
  9. Cook for 20 minutes.
  10. Continue cooking until the chickpeas are just tender but still hold their shape, approximately 40 minutes total.
  11. Drain the chickpeas in a colander and rinse them well with cool water.
  12. Spread the drained chickpeas on a clean kitchen towel or paper towels to dry off excess moisture.
  13. Toss the damp chickpeas with the reserved sweetened seasoning mixture until evenly coated.
  14. If using a dehydrator, spread the chickpeas in a single layer on the trays.
  15. Dehydrate at 135&# 194;°F (57ðC) for 20-22 hours until completely dry and crunchy.
  16. If using an oven, preheat to 150ðF (65ðC).
  17. Spread the chickpeas in a single layer on parchment-lined baking sheets.
  18. Bake for 20-22 hours, turning the pans and stirring the chickpeas every few hours to ensure even drying.
  19. Allow the chickpeas to cool completely before storing in an airtight container.
