Directions

  1. Heat the bacon grease in a large skillet over medium heat.
  2. Add the diced meat, onion, minced garlic, chopped tomatoes, green chiles, and diced potatoes to the skillet.
  3. Sauté the mixture, stirring occasionally, until the meat is browned and the onions are softened.
  4. Stir in the salt, dried oregano, chili powder, and minced cilantro.
  5. Reduce heat and simmer the filling for 2-3 minutes to allow flavors to meld.
  6. Warm the flour tortillas slightly to make them pliable.
  7. Place a scant 1/2 cup of the meat filling onto the center of each tortilla.
  8. Fold the sides of the tortilla inward and roll it up tightly into a burrito shape.
  9. Heat vegetable oil to 360-375ðF (191ðC) in a deep fryer or heavy pot with about 1/2 inch of oil.
  10. Carefully place the chimichangas seam-side down into the hot oil.
  11. Fry until golden brown and crispy on the bottom side.
  12. Flip the chimichangas and fry the other side until evenly browned and crispy.
  13. Remove from oil and drain briefly on paper towels.
  14. Serve immediately topped with shredded cheddar cheese, a dollop of sour cream, and salsa.
  15. Garnish with shredded lettuce and chopped tomatoes on the side or on top.
