Description

This elegant chocolate cake base combines deep semisweet chocolate with bright orange zest and liqueur for a sophisticated flavor profile. The batter is lightened by carefully folded egg whites, resulting in a tender, airy crumb that holds up beautifully to frosting or mousse fillings. Ideal for birthdays, holidays, or special dinner parties, this cake requires patience but rewards with professional-level texture. It serves as the foundation for a stunning multi-layered dessert, offering a moist interior and a delicate crust that flakes away. A showstopper that balances intense cocoa notes with citrus brightness.

Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC). Butter two 9-inch round cake pans, line the bottoms with wax paper, butter the paper, and dust with flour, tapping out the excess.
  2. In the top of a double boiler, heat the chopped chocolate over hot water, stirring constantly until just melted.
  3. Remove from heat and stir in 10 tablespoons of unsalted butter, one tablespoon at a time, until the mixture is smooth.
  4. In a large bowl, beat 6 egg yolks until combined. Gradually add 3/4 cup sugar, beating until the mixture falls in a ribbon when the beater is lifted.
  5. Beat in the melted chocolate mixture, 2 tablespoons orange liqueur, 1 tablespoon grated orange rind, and a pinch of salt until frothy.
  6. In a separate clean bowl, beat 8 whole eggs (or reserved whites if separated earlier) with cream of tartar until frothy. Gradually add 1/4 cup sugar and beat until stiff peaks form.
  7. Sift 2/3 cup cake flour with 1/4 teaspoon salt onto a sheet of wax paper.
  8. Gently stir one-fourth of the beaten egg whites into the chocolate batter to lighten it.
  9. Fold in the remaining egg whites gently but thoroughly.
  10. Sift and fold the flour mixture into the batter in batches until just combined; do not overmix.
  11. Pour the batter into the prepared pans, smoothing the tops.
  12. Bake in the middle of the oven for 30 to 35 minutes, or until a cake tester inserted into the center comes out clean.
  13. Let the cakes cool in the pans on wire racks for 5 minutes.
  14. Invert the cakes onto the racks, carefully remove the wax paper, and let cool completely.
