Chocolate Souffle #2 recipe image

This classic French dessert transforms simple ingredients into a towering, airy marvel. The base is a rich chocolate custard made by melting unsweetened chocolate with sugar and vanilla, then folding it into stiffly beaten egg whites. The result is a soufflé that is light as air on the palate but deeply satisfying with its intense chocolate flavor. It rises dramatically in the oven, creating a golden-brown crust that gives way to a soft, warm center. Perfect for romantic dinners or special celebrations, this dish looks impressive but relies on technique rather than complex ingredients. Serve it immediately with a dollop of freshly whipped cream for the ultimate indulgent experience.

This classic French dessert transforms simple ingredients into a towering, airy marvel. The base is a rich chocolate custard made by melting unsweetened chocolate with sugar and vanilla, then folding it into stiffly beaten egg whites. It rises dramatically in the oven, creating a golden-brown crust that gives way to a soft, warm center. Ingredients

Directions

  1. Preheat oven to 325ðF (165ðC). Grease a 1.5-quart soufflé dish or individual ramekins with butter and dust with sugar.
  2. In a saucepan, melt butter over medium heat. Add flour and a pinch of salt, stirring constantly to form a smooth paste (roux).
  3. Gradually stir in 1 cup of milk. Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture thickens and coats the back of the spoon.
  4. Remove from heat and stir in 1/2 cup of sugar until dissolved.
  5. In a separate heatproof bowl set over simmering water (double boiler), melt 3 squares (3 oz) of unsweetened chocolate with 3 tablespoons of hot water, stirring until smooth.
  6. Add 1 teaspoon of vanilla extract to the chocolate mixture and stir into the thickened milk mixture. Mix well until combined.
  7. In a clean bowl, beat 3 egg yolks slightly, then stir them into the chocolate mixture.
  8. In a separate clean, dry bowl, beat 3 egg whites until stiff peaks form. Be careful not to whip them to a dry, crumbly texture.
  9. Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining whites until just combined, leaving a few streaks of white.
  10. Immediately pour the batter into the prepared dish. Run your thumb around the inside edge of the dish to create a small gap, which helps the soufflé rise evenly.
  11. Bake for 50 to 60 minutes, or until the soufflé has risen and the top is set but the center is still slightly jiggly.
  12. While baking, whip 1/2 cup of heavy cream until soft peaks form.
  13. Serve immediately by placing a dollop of whipped cream on top of each serving.
