Description

These Chokecherry Crown Rolls are a delightful twist on classic dinner rolls, featuring a sweet and tart filling made from wild chokecherries. The dough is rich and tender, enriched with milk and margarine, then shaped into decorative coils that hold a spoonful of thickened cherry compote in their centers. Baked until golden brown, these rolls offer a beautiful contrast between the soft, yeasty bread and the jam-like fruit filling. Drizzled with a simple icing, they make an impressive centerpiece for holiday dinners, potlucks, or special weekend breakfasts. The unique flavor of chokecherries provides a rustic, homemade charm that pairs wonderfully with hearty main courses or simply with a cup of coffee.

Ingredients

Directions

  1. Prepare the filling: In a small saucepan, combine 1 cup chokecherry juice, 1/4 cup sugar, and 1/4 cup cornstarch.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  3. Stir in 2 cups pitted chokecherries and remove from heat. Let the filling cool completely.
  4. In a large mixing bowl, combine 1 cup flour, 1/2 cup sugar, 2 teaspoons salt, and 2 packages of yeast.
  5. In a saucepan, combine 3/4 cup milk, 1/2 cup water, and 1/2 cup margarine. Heat over low heat until very warm (120-130&# 194;°F); the margarine does not need to fully melt.
  6. Gradually add the warm liquid mixture to the dry ingredients. Beat with an electric mixer at medium speed for 2 minutes, scraping down the bowl occasionally.
  7. Add 1 room-temperature egg and 1/2 cup flour. Beat at high speed for 2 minutes.
  8. Add enough remaining flour to form a stiff dough.
  9. Cover the bowl tightly with foil and refrigerate for 2 hours or overnight.
  10. Remove dough from the refrigerator and let it stand at room temperature for about 30 minutes to soften and rise slightly.
  11. Turn the dough out onto a lightly floured surface. Divide into 18 equal pieces.
  12. Roll each piece into a 15-inch long rope.
  13. Hold one end of the rope in place and wind the dough loosely into a coil shape. Tuck the end firmly underneath.
  14. Place the coils on greased baking sheets, spacing them about 2 inches apart.
  15. Cover and let rise until doubled in size, about 1 hour.
  16. Preheat oven to 400ðF (204ðC).
  17. Using your finger, press an indentation about 1 inch wide into the center of each coil, pressing down to the bottom.
  18. Fill each indentation with the cooled chokecherry filling.
  19. Bake for 12 to 15 minutes, or until golden brown and done.
  20. Remove from pans and cool on wire racks.
  21. Once cool, drizzle with thin icing.
