Description

This Citrus Rice Mold is a delightful departure from standard hot rice dishes, offering a cool, refreshing side perfect for summer gatherings or light lunches. The base consists of fluffy cooked rice gently bound with mayonnaise and fresh herbs, creating a sturdy yet tender texture that holds its shape when unmolded. Finely chopped onions and crisp green bell peppers provide a subtle crunch and sharp contrast to the soft rice. The real star, however, is the vibrant garnish of fresh orange and grapefruit segments, which add a burst of acidity and sweetness that cuts through the richness of the dressing. Served on a bed of peppery chicory and watercress, this dish balances savory and sweet notes beautifully. It is an impressive yet simple centerpiece that looks sophisticated on the table but is surprisingly easy to assemble.

Ingredients

Directions

  1. Finely chop the green onions and the green bell pepper.
  2. Peel one orange and one grapefruit, removing the pith and separating them into segments.
  3. Wash and dry the chicory leaves and watercress.
  4. In a medium bowl, combine the cooked rice, chopped onions, chopped bell pepper, mayonnaise, chopped parsley, salt, and pepper. Mix gently until evenly coated.
  5. Lightly oil an 8-inch-diameter ring mold to prevent sticking.
  6. Pack the rice mixture firmly into the ring mold, ensuring it is level and compact.
  7. Refrigerate the mold for at least 2 hours, or until the rice mixture is firm and holds its shape.
  8. Gently invert the ring mold onto a cold serving plate and carefully lift the ring to turn out the rice.
  9. If any rice comes loose from the ring, patch it back into place with your fingers.
  10. Arrange the orange and grapefruit segments in a decorative circle around the edge of the plate.
  11. Place the chicory leaves and watercress in the center of the rice ring.
  12. Refrigerate again until ready to serve to maintain freshness and firmness.
