Ingredients

Directions

  1. Line an 8x8 inch baking pan with parchment paper or lightly grease it with butter.
  2. For the first (dark) layer: In a heavy-bottomed saucepan, combine 1 1/4 cups sugar, 1/2 cup milk, 3/4 tablespoon butter, and the cocoa powder.
  3. Stir in the baking chocolate, broken into small pieces, and cook over medium heat, stirring constantly until the chocolate is melted and the mixture is smooth.
  4. Once boiling, stop stirring and cook until the mixture reaches the soft-ball stage (238ðF (114ðC) on a candy thermometer).
  5. Remove from heat and let cool until the mixture is lukewarm, then stir in 1/2 teaspoon vanilla.
  6. Beat the mixture vigorously until it thickens and begins to lose its gloss, then pour into the prepared pan and spread evenly.
  7. For the second (vanilla) layer: In a clean saucepan, combine the remaining 1 cup sugar, 1/2 cup milk, 3/4 tablespoon butter.
  8. Cook over medium heat until boiling, then continue cooking without stirring until the soft-ball stage (238ðF (114ðC)) is reached.
  9. Remove from heat and let cool until lukewarm, then stir in the remaining 1/2 teaspoon vanilla.
  10. Beat the vanilla mixture vigorously until it thickens and becomes creamy, then pour over the set chocolate layer.
  11. Smooth the top with a knife and let the fudge cool completely at room temperature until firm.
  12. Cut into squares before serving.
