  2. In a large bowl, whisk together the egg white, 2 tablespoons of cornstarch, and soy sauce until smooth.
  3. Add the chicken pieces to the egg mixture, tossing gently to coat each piece thoroughly.
  4. In a separate small bowl, mix the remaining cornstarch (if any) or additional dry coating ingredients if specified, then add to the chicken and stir to create a light batter.
  5. Heat vegetable oil in a deep skillet or wok over medium-high heat until it reaches 370°F (190°C).
  6. Carefully drop 4 to 5 pieces of coated chicken into the hot oil at a time to avoid overcrowding.
