  1. Bring a large pot of salted water to a boil. Cook the medium pasta shells according to package directions until al dente. Drain and rinse thoroughly under cold water to stop the cooking process. Drain again and set aside in a large bowl.
  2. Preheat the oven broiler. Place the chicken breasts between two sheets of waxed paper or plastic wrap and pound them until they are an even 1/4-inch thickness.
  3. In a shallow dish, combine the oat bran, grated Parmesan cheese, and dried thyme. Spread 1/4 cup of the Dijon mustard evenly over both sides of the chicken breasts.
  4. Press the mustard-coated chicken into the oat bran mixture to coat completely. Lightly spray a broiling pan with nonstick cooking spray and place the chicken on the pan.
  5. Broil the chicken approximately 5 inches from the heat source for about 3 minutes per side, or until the coating is golden and the chicken is cooked through. Remove from heat and let cool slightly, then cut into bite-sized strips or snips.
  6. While the chicken cooks, prepare the dressing. In a blender or food processor, combine the thawed apple juice concentrate, balsamic vinegar, remaining 2 tablespoons of Dijon mustard, grated apple, chopped cilantro, granulated sugar, and cayenne pepper. Blend on high speed until smooth.
  7. To the bowl with the cooled pasta, add the torn salad greens, red and green bell pepper chunks, drained corn, and sliced red onion. Toss gently to combine.
  8. Pour the dressing over the pasta and vegetable mixture. Toss gently until everything is evenly coated.
  9. Top the salad with the broiled chicken strips. Serve immediately while the chicken is still slightly warm, or chill for 30 minutes to serve cold.
