  1. Cut the mutton into bite-sized pieces and place them in a bowl.
  2. Pour the vinegar over the mutton, toss to coat, and let it marinate for 30 minutes.
  3. Chop the onion and grind it with the garlic and ginger using a pestle and mortar until smooth.
  4. Heat the oil in a large pot over medium heat.

  6. Stir in the chilli powder, paprika, turmeric, black pepper, coriander, cumin, and fenugreek.
  7. Fry the spice mixture for 3 minutes, stirring constantly to prevent burning.
  8. Drain the mutton from the marinade and add it to the pot.
  9. Fry the mutton for 5 minutes, stirring occasionally to brown the meat.
  10. Pour in the coconut milk and the reserved marinade, then bring the mixture to a boil.
  11. Cover the pot, reduce the heat to low, and simmer for 1 hour, or until the mutton is tender.
  12. Just before serving, sprinkle with curry powder and season with salt to taste.
