Description

These Fried Pork Pies are a delightful savory appetizer or snack, featuring a rich filling of minced shrimp, bacon, and water chestnuts bound together with egg and cornstarch. Coated in fine, crumbled bread, they are deep-fried to a perfect golden brown, offering a satisfying crunch that gives way to a juicy, flavorful interior. The combination of salty bacon, sweet shrimp, and crunchy water chestnuts creates a complex texture and taste profile that is both comforting and exciting. Ideal for parties, game days, or as a unique side dish, these fritters are best served warm with a side of dipping sauce or fresh parsley for garnish.

Ingredients

Directions

  1. Finely mince the shrimp, bacon, onion, and water chestnuts together in a bowl until the mixture is uniform and fine.
  2. Remove crusts from the bread and dice the remaining bread into very fine cubes to create a breadcrumb texture.
  3. Add the finely diced bread cubes to the minced shrimp and bacon mixture.
  4. Add salt, pepper, one egg, and 2 tablespoons of cornstarch to the bowl.
  5. Mix all ingredients thoroughly by hand or with a spoon until well combined and the mixture holds together.
  6. Fill a wok or deep fryer halfway with oil and heat over high heat.
  7. Test the oil temperature by dropping a small piece of bread crust into the oil; if it turns golden brown immediately, the oil is ready.
  8. If the bread turns dark brown quickly, the oil is too hot; reduce heat and let it cool for a few minutes before retesting.
  9. Take 2 teaspoons of the shrimp mixture and form it into a 1-inch diameter ball.
  10. Carefully drop the ball into the hot oil, ensuring you do not overcrowd the wok (place about 8 balls at a time).
  11. Deep fry the balls for approximately 3 minutes, turning them occasionally to ensure even browning.
  12. Remove the fried balls from the oil when they are golden brown and place them on paper towels to drain excess oil.
  13. Repeat the frying process with the remaining mixture until all balls are cooked.
  14. Arrange the fried pork pies on a serving platter and garnish with fresh parsley or other raw vegetables.
