  3. Using a sharp knife, cut a deep pocket into the pork loin, slicing horizontally almost to the end on both sides and leaving a 1-inch margin on the other side to keep the roast intact.
  4. In a small saucepan, combine prunes, beer, and ginger. Bring to a boil, then remove from heat and let stand for 5 minutes to soften the fruit.
  5. Toss chopped apple with lemon juice in a small bowl to prevent browning.
  6. Drain the prunes, reserving the liquid. Pat the prunes dry with paper towels.
  7. Combine the drained prunes and the lemon-tossed apples in a bowl.
  8. Stuff the prune and apple mixture into the pocket cut into the pork roast.
  9. Tie the roast with kitchen twine at 1-inch intervals to secure the stuffing and maintain the shape.
