Preheat oven to 375 F (191&# 194;°C). Lightly coat muffin tins with cooking spray, or use muffin cups. In a medium bowl, combine sugar, applesauce, yogurt, eggs, vanilla, oil and ginger. In another medium bowl, combine rice, flour, baking soda, baking powder, cinnamon and cloves. Gradually combine dry and wet ingredients. Mix only until blended (do not overmix). Stir in raisins and walnuts. Spoon batter into muffin cups, filling them 3/4 full. Bake about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
