  2. Spread almonds, pecans, or walnuts on a baking sheet.
  3. Toast nuts in the oven for 10-15 minutes, or until lightly golden and fragrant.
  4. Remove nuts from oven and let cool completely.
  5. Coarsely chop the toasted nuts in a food processor or by hand.
  6. Spread the chopped nuts on a platter or plate for rolling.
  7. In a mixing bowl, combine cream cheese, Roquefort cheese, and heavy cream.
  8. Beat the cheese mixture with an electric mixer until smooth and creamy.
