Ingredients

Directions

  1. Preheat the oven to 350ðF (175ðC).
  2. In a large mixing bowl, combine the ground beef, egg, bread crumbs, onion powder, garlic powder, and 1/4 cup of catsup.
  3. Mix all ingredients thoroughly with your hands or a spoon until just combined; avoid overmixing to keep the meatloaf tender.
  4. Line a loaf pan with plastic wrap, leaving some overhang on the ends for easy removal.
  5. Press the meat mixture firmly into the prepared pan to form a compact loaf.
  6. Place a wire rack inside a baking dish.
  7. Using the plastic wrap, invert the loaf onto the wire rack so it releases cleanly from the pan.
  8. Spread 2 tablespoons of catsup evenly over the top of the meatloaf.
  9. Lay 2 or 3 strips of bacon across the top of the meatloaf.
  10. Bake for 1 hour and 15 minutes, or until the internal temperature reaches 160ðF (71ðC) and the bacon is crispy.
  11. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
