Directions
-
Preheat oven to 375ðF (190ðC).
-
Drain the liquid from the fresh coconut and place it on a baking sheet. Bake until the shell begins to crack, about 30 minutes.
-
Remove from oven and let cool slightly. Tap the coconut shell with a hammer to crack it open and remove the shell.
-
If the white meat does not fall away from the shell naturally, use a paring knife to release it. Rinse the coconut meat thoroughly.
-
Using a paring knife, cut away the brown skin from the coconut meat if desired, though leaving it on adds color and fiber.
-
Coarsely chop the coconut meat in a food processor until you have measured 3/4 cup. Reserve any remaining coconut for another use.
-
Heat a small skillet over medium heat. Add the cumin seeds and stir constantly until fragrant, about 3 minutes. Be careful not to burn them.
-
Transfer the toasted cumin seeds to a plate to cool completely. Once cool, finely grind them in a spice grinder or mortar and pestle.
-
Core the Granny Smith apples and cut them into 1/2-inch pieces.
-
Place the apple pieces in a medium bowl and add the fresh lemon juice. Toss to coat evenly to prevent browning.
-
Combine the 3/4 cup chopped coconut, ground cumin, lemon-coated apples, cilantro, chilies, garlic, and salt in the food processor.
-
Pulse or chop finely until the chutney reaches a consistent, rustic texture. Taste and adjust salt if needed.

Note
**Coconut Selection:** When buying a fresh coconut, choose one that is heavy for its size and sounds full of liquid when shaken. Avoid any with visible cracks.
**Storage:** This chutney can be made up to 1 day ahead. Cover tightly and refrigerate. Bring to room temperature before serving to enhance the flavors.
**Spice Level:** Adjust the heat by varying the amount of serrano or jalapeño chilies used. Remove seeds for a milder flavor.
**Texture:** For a smoother chutney, blend longer. For a chunkier texture, pulse briefly.
