Description

This vibrant Green Apple Jelly captures the crisp, tart essence of fresh apples, balanced by the zesty brightness of lemon juice. Unlike sweet jams, this jelly offers a sophisticated tang that pairs beautifully with cheese boards, charcuterie, or as a glaze for roasted meats. The process involves slow-straining the cooked fruit to achieve a crystal-clear, golden hue and a firm, elegant set. It is an ideal project for preserving the bounty of autumn harvests, requiring patience but rewarding you with a shelf-stable treat that shines on its own or alongside breakfast pastries. The natural pectin in the skins and seeds ensures a perfect texture without artificial additives.

Ingredients

Directions

  1. Wash the green apples thoroughly. Do not peel or core them, as the skins and seeds contain essential pectin.
  2. Cut the whole apples into small pieces.
  3. Place the apple pieces in a large pot and cover with 3 cups of water. Add more water if necessary to just cover the fruit.
  4. Add the lemon juice to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer until the apples are very tender and falling apart.
  6. Remove the pot from heat and mash the apples slightly with a potato masher or spoon.
  7. Line a colander or funnel with a clean jelly bag or several layers of cheesecloth and place it over a large bowl.
  8. Pour the hot apple mixture into the bag. Let it drip naturally for 4 to 6 hours, or overnight for a clearer jelly. Do not squeeze the bag.
  9. Measure the strained juice. For every cup of juice, add one cup of sugar to a clean heavy-bottomed pot.
  10. Bring the juice and sugar mixture to a full rolling boil that cannot be stirred down.
  11. Boil until the mixture reaches 220 degrees F (104&# 194;°C) on a candy thermometer.
  12. Remove from heat and skim off any foam.
  13. Ladle the hot jelly into sterilized jars, leaving appropriate headspace.
  14. Seal with lids and bands, then process in a water bath canner according to safe canning guidelines.

Note

Do not squeeze the jelly bag when straining, as this will force pulp through and result in a cloudy jelly.

Ensure your pot is large enough to allow the jelly to rise during the rolling boil without spilling over.

The jelly must reach a rolling boil and hit the 220-degree mark to ensure a proper set.

Sugar is not listed in the ingredients but is required for the final boil: use 1 cup of sugar for every 1 cup of juice.
