  1. Rub the spicy BBQ shake on all sides of the country-style pork ribs and place them in a large bowl.
  2. Distribute the minced onion and garlic evenly over the ribs.
  3. Combine the soy sauce and Worcestershire sauce, then drizzle the mixture over the ribs, tossing well to coat.
  4. Sprinkle the ribs generously with freshly ground black pepper.
  5. Marinate the ribs for at least 2 hours at room temperature, or longer in the refrigerator for deeper flavor.
  6. Thirty minutes before cooking, soak 6 hickory wood chunks in water.
  7. Prepare a covered grill for indirect low-heat cooking.
  8. Place the ribs bone-side down on the grill grate over the low fire.
  9. Cook the ribs for approximately 3 hours, until tender, juicy, and deeply colored.
  10. Add dampened hickory wood chunks to the fire during cooking to maintain smoke, and add charcoal as needed to maintain temperature.
  11. Baste the ribs with bourbon BBQ sauce toward the end of the cooking time.
  12. Serve the cooked ribs with additional barbecue sauce on the side.
