This comforting Japanese country-style dish features tender cubes of pork shoulder slowly braised with thinly sliced potatoes in a rich, aromatic broth. The sauce is built on a balance of salty soy sauce, sweet mirin, and dry sake, creating a deep umami flavor that coats every bite. As the dish simmers, the potatoes soften and absorb the savory juices, while the pork becomes fork-tender. Finished with fresh green onions, this hearty stew is perfect for chilly evenings or as a satisfying main course served over steamed rice. It’s a simple, rustic meal that brings warmth and nostalgia to the table, requiring only basic pantry staples and a little time to simmer.

Ingredients

Directions

  1. Trim roots and any wilted ends from green onions. Cut onions into 1-inch lengths, keeping green and white parts separate; set aside.
  2. Heat oil in a 5- to 6-quart pan over medium-high heat.
  3. Add half the pork; cook, stirring, until well browned (about 10 minutes). Remove from pan and keep warm. Repeat with remaining pork.
  4. Discard all but 1 tablespoon of drippings from pan.
  5. Add sliced onion to pan and cook, stirring occasionally, until soft (about 7 minutes).
  6. Return pork to pan and add soy sauce, sake, water, and mirin.
  7. Bring to a boil; then reduce heat, cover, and simmer for 25 minutes.
  8. Add potatoes, white part of green onions, pepper, and sugar.
  9. Return to a boil; then reduce heat, cover, and simmer until pork and potatoes are tender when pierced (about 25 minutes).
  10. Garnish with tops of green onions.

Note

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors often improve after resting overnight.

You can substitute chicken thigh meat for the pork if you prefer a lighter option.

Red potatoes hold their shape well during simmering, but Yukon Golds also work nicely for a creamier texture.

Serve hot over steamed white rice for a complete meal.
