Description

Indulge in the sophisticated flavors of this Kahlua Cheesecake, a luxurious no-bake dessert that combines creamy cheese with the robust notes of coffee liqueur. The base is a unique, crisp zwieback crust that adds a delightful textural contrast to the smooth filling. Infused with Kahlua and stabilized with gelatin for perfect slicing, this cheesecake offers a balanced sweetness with deep, aromatic coffee undertones. It is an ideal treat for dinner parties, holiday gatherings, or whenever you crave a rich, caf-quality dessert at home. Simple to assemble and requiring no oven time for the filling, its a crowd-pleaser that showcases elegant flavor without the fuss of traditional baking.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. In a bowl, combine crushed zwieback cookies, 1/3 cup sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and halfway up the sides of a 9-inch springform pan.
  4. Bake the crust for 8-10 minutes, then remove and allow to cool completely.
  5. Sprinkle gelatin over 1/2 cup water in a small bowl and let stand for 5 minutes to soften.
  6. Heat 1/2 cup Kahlua in a small saucepan until steaming (do not boil), then stir in the softened gelatin until fully dissolved. Set aside to cool slightly.
  7. In a large mixing bowl, beat the cream cheese, 1/4 cup sugar, and salt until smooth and creamy.
  8. Beat in the egg yolks one at a time, then stir in the Kahlua-gelatin mixture.
  9. In a separate clean bowl, beat the egg whites until stiff peaks form.
  10. In another clean bowl, beat the whipping cream until stiff peaks form.
  11. Gently fold the beaten egg whites into the cream cheese mixture, followed by the whipped cream, until just combined and no white streaks remain.
  12. Pour the filling over the cooled crust and smooth the top.
  13. Refrigerate for at least 4 hours, or until firmly set, before slicing and serving.

Note

Ensure the cream cheese is fully softened to room temperature before mixing to prevent lumps.

The gelatin must be fully dissolved in the warm Kahlua; if it clumps, the cheesecake may not set properly.

For a richer crust, you can substitute zwieback with graham crackers or digestive biscuits.

Garnish with chocolate shavings or a dusting of cocoa powder before serving for an elegant presentation.

Store leftovers covered in the refrigerator for up to 3 days.
