  1. Wash the chicken pieces thoroughly and pat dry with paper towels.
  2. In a large bowl, combine the chicken with crushed cardamoms, cloves, chilli powder, cinnamon stick, paprika, salt, curry powder, fenugreek seeds, and brown vinegar. Toss to coat evenly and let marinate for 20 minutes.
  3. Meanwhile, slice the tomatoes, shallots, and chilli. Grate the ginger and mince the garlic.
  4. Heat the oil in a large heavy-bottomed pot or deep skillet over medium heat.
  5. Add the curry leaves, bruised lemongrass, sliced shallots, chilli, garlic, and ginger to the hot oil. Stir-fry until the shallots turn light brown and fragrant, about 3-4 minutes.
  6. Add the chopped tomatoes to the pan and toss for a couple of minutes until they begin to soften.
  7. Add the marinated chicken to the pan. Stir-fry for 5 minutes, ensuring the chicken is lightly browned and coated in the spice mixture.
  8. Pour in the thick coconut milk and bring the mixture to a gentle boil.
  9. Reduce the heat to low, cover, and simmer until the chicken is tender and cooked through, approximately 20-30 minutes. Stir occasionally to prevent sticking.
  10. Once cooked, discard the cinnamon stick and lemongrass stem if desired.
  11. Sprinkle the remaining curry powder and fresh lime juice over the curry just before serving. Adjust salt to taste.
