Description

These classic potato skins offer the perfect balance of crispy exterior and creamy, cheesy interior. Made with hearty baking potatoes, they are hollowed out and brushed with butter before being baked until golden and crisp. The skins are then generously topped with melted cheddar cheese, savory crumbled bacon, and fresh green onions for a burst of flavor. This appetizer is a crowd-pleaser at game day gatherings, parties, or as a satisfying starter for any meal. Simple to prepare yet indulgent in taste, these skins bring home-style comfort to your table without requiring complex techniques.

Ingredients

Directions

  1. Scrub potatoes clean, dry thoroughly, and pierce several times with a fork.
  2. Arrange potatoes on a baking sheet and bake in a 375 degree oven for about 1 hour or until tender.
  3. Let potatoes stand until cool enough to handle.
  4. Cut potatoes in half lengthwise and scoop out centers, leaving about 1/8 inch of potato in the shell.
  5. Melt the 1/3 cup of butter.
  6. Brush the inside and outside of each potato shell with the melted butter.
  7. Place shells cut-side up on a baking sheet.
  8. Bake in a 500 degree oven for 20 minutes or until brown and crisp.
  9. Distribute the bacon, green onions, and shredded cheddar cheese evenly among the shells.
  10. Return to oven and bake just until the cheese is melted.
  11. Serve hot immediately.

Note

The scooped-out potato centers can be saved and mixed with milk, butter, salt, and pepper to make a side of mashed potatoes.

Potato shells can be prepared up to 2 days in advance. Cover and chill in the refrigerator until ready to finish baking.

If using large potatoes, consider cutting them in half crosswise before serving for easier eating.

For a larger crowd, consider doubling the recipe as these skins disappear quickly.
