Ingredients

Directions

  1. Line an 8-inch square pan with parchment paper and set aside.
  2. Place 1 cup of sugar in a heavy 3-quart saucepan over medium heat.
  3. Stir constantly until the sugar melts and turns a light golden amber color, being careful not to burn it.
  4. Very carefully add the boiling water to the melted sugar; the mixture will bubble vigorously, so stand back.
  5. Stir until the sugar dissolves, then add the remaining 2 cups of sugar, non-dairy coffee cream, and a pinch of salt if desired.
  6. Place the saucepan over medium heat and stir until the mixture comes to a boil.
  7. Attach a candy thermometer and cook without stirring until the mixture reaches 238°F (114°C) (soft-ball stage).
  8. Remove the pan from heat and let it cool until it is lukewarm, about 110°F.
  9. Beat the mixture vigorously with a wooden spoon or electric mixer until it thickens, loses its gloss, and begins to hold its shape.
  10. Fold in grated orange rind and chopped nuts or pecans until evenly distributed.
  11. Quickly spread the fudge into the prepared pan, smoothing the top with a spatula.
  12. Allow the fudge to cool completely at room temperature before cutting into squares.

Note

Ensure you use a candy thermometer for accuracy; reaching the soft-ball stage (238°F) is crucial for the correct texture.

When adding boiling water to caramelized sugar, stand back and pour slowly to avoid dangerous splattering.

For best results, use fresh orange zest. You can adjust the amount of nuts based on preference, or omit them for a smoother texture.

Store in an airtight container at room temperature for up to two weeks.
