Mexican Turkey Rollps
Description
These Mexican Turkey Roll-Ups are a comforting, family-friendly dinner that combines tender cubed turkey with zesty taco seasoning, sharp cheddar cheese, and briny olives. Wrapped in soft flour tortillas, they are nestled in a baking dish and smothered with a rich, creamy sauce made from condensed mushroom soup and sour cream. The result is a warm, savory casserole that balances the heat of the salsa with the cool creaminess of the topping. Perfect for weeknight suppers, this dish is easy to assemble and delivers big flavor with minimal effort. Serve it hot with crisp shredded lettuce and fresh chopped tomatoes on the side for a refreshing contrast to the rich, baked rolls.Ingredients
Directions
-
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 13x9-inch baking dish.

In a large bowl, combine the cubed cooked turkey, chopped onion, 1/2 cup salsa, sliced ripe olives, 1 1/2 teaspoons taco seasoning, half of the condensed cream of mushroom soup, 1 cup shredded cheddar cheese, and 1/2 cup sour cream. Mix well.
-
Lay out the flour tortillas. Place approximately 1/3 cup of the turkey mixture onto each tortilla.
-
Roll up the tortillas tightly and place them seam-side down in the prepared baking dish.
-
In a small bowl, combine the remaining sour cream, remaining taco seasoning, and remaining condensed cream of mushroom soup. Stir until smooth.
-
Pour the sour cream mixture evenly over the rolled-up tortillas in the baking dish.
-
Cover the dish with foil and bake for 30 minutes, or until heated through.
-
Remove from oven and sprinkle with the remaining shredded cheddar cheese.
-
Serve hot, topped with shredded lettuce, chopped tomatoes, and additional salsa if desired.

Make sure the turkey is cooled slightly before mixing to prevent the cheese from melting too early during assembly.
