These Milk Rolls are the epitome of comfort baking, offering a tender, pillowy texture that melts in your mouth. The secret lies in scalding the milk, which deactivates enzymes that can toughen gluten, resulting in an incredibly soft crumb. Enriched with shortening and a touch of sugar, these rolls have a subtle sweetness and a rich, buttery flavor profile. They are perfect for breaking bread at Sunday dinners, pairing with soups and stews, or simply enjoying warm with butter for breakfast.

Description

These Milk Rolls are the epitome of comfort baking, offering a tender, pillowy texture that melts in your mouth. The secret lies in scalding the milk, which deactivates enzymes that can toughen gluten, resulting in an incredibly soft crumb. Enriched with shortening and a touch of sugar, these rolls have a subtle sweetness and a rich, buttery flavor profile. They are perfect for breaking bread at Sunday dinners, pairing with soups and stews, or simply enjoying warm with butter for breakfast.

Ingredients

Directions

  1. Scald the milk by heating it until steam rises, then cool it until warm to the touch (about 110°F-115°F).
  2. Stir the shortening into the warm milk until melted, then stir in the sugar and salt.
  3. In a small bowl, dissolve the yeast in 1/2 cup of warm water with a teaspoon of sugar; let sit for 5-10 minutes until foamy.
  4. Add the foamy yeast mixture and beaten eggs to the milk mixture.
  5. Gradually add the flour, mixing until a soft dough forms that pulls away from the sides of the bowl.
  6. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth, elastic, and no longer sticky.
  7. Place the dough in a lightly greased bowl, turning once to grease the top. Cover with a damp cloth or plastic wrap and let rise in a warm place for about 1 hour, or until doubled in size.
  8. Punch down the dough to release air bubbles and turn it out onto a lightly floured surface.
  9. Divide the dough into 12 equal pieces.
  10. Shape each piece into a smooth ball by pulling the edges underneath to create tension on the top surface.
  11. Place the shaped rolls in a greased 9x13 inch baking pan, leaving about an inch of space between them.
  12. Cover the pan and let the rolls rise again for 30-45 minutes, until they are puffy and nearly touching.
  13. Preheat the oven to 375°F (190°C).
  14. Bake the rolls for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  15. Remove from the oven and immediately brush the tops with melted butter if desired.
  16. Let cool in the pan for 5 minutes before serving warm.
