  1. Reserve chicken backs and wings to make stock, or use prepared chicken stock.
  2. Heat olive oil in a large skillet or paella pan over medium-high heat.
  3. Brown chicken pieces on all sides until golden, then remove and set aside.
  4. Return chicken to the pan; sprinkle with oregano, saffron, parsley, salt, and pepper.
  5. Add chorizo slices and simmer for 10 minutes.
