Description

These Peach Upside-Down Muffins are a delightful twist on the classic cobbler, offering individual portions of warm, fruity goodness. The batter is light and airy, providing a perfect contrast to the rich, buttery caramel layer at the bottom. Fresh ripe peaches soften during baking, releasing their natural juices into the sugar and butter to create a sticky, golden glaze. Ideal for summer brunches, potlucks, or as a comforting dessert after a light meal, these muffins capture the essence of home baking. They are simple to prepare using pantry staples and fresh fruit, making them an accessible treat for any occasion.

Ingredients

Directions

  1. Preheat oven to 375F (190C).
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine melted shortening, beaten eggs, and milk; mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Grease 18 muffin cups. Place 1 teaspoon of butter and 1 tablespoon of packed brown sugar in the bottom of each cup.
  6. Place the muffin tin in the preheated oven for 5 minutes to melt the butter and caramelize the sugar.
  7. Remove from oven and carefully arrange sliced peaches on top of the caramelized sugar in each cup.
  8. Fill each muffin cup halfway with the batter.
  9. Bake for 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 1 minute, then immediately turn out onto a wire rack to cool slightly.

Note

Storage: Store leftovers in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Reheat gently in the microwave before serving.

Substitutions: You can use fresh or frozen peaches. If using frozen, thaw and drain excess liquid before slicing. Apples or pears can also be used as a seasonal alternative.

Tip: For easier release, ensure the caramel layer is fully melted before adding the fruit. If the muffins stick, run a knife around the edges before inverting.

Variation: Add a teaspoon of lemon juice to the peaches to brighten the flavor, or sprinkle with cinnamon for added warmth.
