  1. Place the rice in a bowl and cover with plenty of cold water to soak.
  2. Coarsely chop the onion.
  3. Clean and chop the carrots into small pieces.
  4. Peel the potato and slice it into thick crosswise circles.
  5. Drain the rice in a colander and rinse thoroughly with cold water.
  6. Place the rinsed rice and 2 1/4 cups of water in a pot.
  7. Sprinkle with salt and bring to a quick boil over high heat.
  8. Cover the pot with a dish towel, then place the lid on top to trap steam.
  9. Reduce heat to low and cook for 20 minutes until the rice is fluffy and grains are separated.
