Pickled Walnuts
Description
Pickled walnuts are a distinctive British delicacy that transforms young, green walnuts into a pungent, dark condiment. Harvested in June or July before the shells harden, these nuts are cured in brine and then steeped in a rich vinegar infused with allspice, ginger, and peppercorns. The result is a deep black, glossy walnut with a complex flavor profile that is both sweet and spicy. They are traditionally served with cold meats, cheese boards, or as a sophisticated garnish. This recipe requires patience, with a curing process lasting several weeks, but the reward is a unique, artisanal pickle that adds a memorable kick to any meal. It is a wonderful way to preserve the bounty of a walnut tree.Ingredients

-
Drain the walnuts well and spread them on a tray in a warm room or in direct sunlight.
-
Turn the walnuts occasionally and leave for 2 to 3 days until they turn black.
-
Lightly crush the allspice, peppercorns, and ginger to bruise them, then tie them in a piece of cheesecloth.

Add the spice bag to the white vinegar in a covered enamel or stainless steel pan.
-
Boil the vinegar mixture for 10 minutes, then remove from heat and allow to cool.
-
Remove the spice bag from the vinegar.

Note
Safety: Always wear rubber gloves when handling green walnuts, as the juice stains skin and surfaces badly and is difficult to remove.
Harvesting: Green walnuts must be picked in June or July. To test readiness, push a thin skewer into the nut; you should be able to feel when the shell is just beginning to form but is still soft.
Storage: Ensure jars are sterilized before packing. Store in a cool, dark place after sealing.
Serving: Pickled walnuts are traditionally served with cold meats, game, or cheese. They make an excellent alternative to olives for garnishing.
Equipment: Use enamel or stainless steel pans for boiling vinegar to avoid metallic reactions.
