Pistachio Turkish Delight
Description
This traditional Turkish delight offers a delicate balance of floral sweetness and nutty crunch. The soft, jelly-like texture comes from a carefully cooked cornflour and sugar syrup base, infused with aromatic rosewater and a hint of tartaric acid for that signature tang. Each bite is enhanced by toasted shelled pistachios, providing a pleasant contrast to the tender interior. Perfectly dusted with a blend of icing sugar and cornflour to prevent sticking, these treats are ideal for serving with coffee or tea. They make a charming addition to dessert platters, holiday gifts, or afternoon snacks. While authentic lokum can be complex, this recipe simplifies the process without sacrificing the classic flavor profile, making it an accessible yet impressive homemade confection.Ingredients
Directions
-
Combine sugar and 1/2 cup water in a saucepan, stirring over low heat until the sugar is completely dissolved.
-
Bring the mixture to a boil, then reduce heat and cook until the syrup reaches 115C (239F) on a candy thermometer, or until it forms a soft ball when dropped into cold water.
-
Stir in the tartaric acid and remove the syrup from the heat.
-
In a separate bowl, combine the cornflour and sifted icing sugar mixture. Add 1/2 cup water and stir until a smooth, lump-free paste forms.
-
Bring the remaining 1 1/2 cups of water to a boil in a small saucepan.
-
Quickly whisk the boiling water into the cornflour paste, stirring constantly to prevent lumps.
-
Return the mixture to the saucepan and cook over medium heat, stirring continuously, until it boils and thickens significantly.
-
Gradually add the hot sugar syrup to the thickened cornflour mixture, stirring constantly to incorporate it fully.
-
Continue to boil gently for 30 minutes. Do not stir during this time to allow the mixture to set properly.
-
Remove from heat and stir in the rosewater, pink food coloring, and shelled pistachios until evenly distributed.
-
Immediately pour the mixture into a greased 20 cm (8-inch) square pan. Smooth the top if necessary.
-
Let the delight stand at room temperature for several hours, or until completely set and firm to the touch.
-
Dust a cutting board and a knife with the extra cornflour and icing sugar mixture. Cut the set delight into small squares using the wet, dusted knife.
-
Toss the cut squares in the remaining cornflour and icing sugar mixture to coat evenly.
