Pork Loin In Green Sauce
Description
This hearty Mexican-inspired dish features tender boneless pork loin slow-simmered until fall-apart soft, then bathed in a bright, zesty green sauce. The salsa verde is made from fresh tomatillos, roasted green chiles, garlic, and cilantro, providing a perfect balance of acidity and herbaceous flavor that cuts through the richness of the meat. It is a comforting yet vibrant main course that feels both rustic and refined. Ideal for weeknight dinners when you want something substantial without spending hours in the kitchen, this recipe brings warm, home-style flavors to your table.Directions
-
Place the 4 pounds of boneless pork loin in a large pot or Dutch oven.
-
Cover the meat completely with cold water.
-
Add the chopped onion, bay leaf, marjoram, and thyme to the pot.
-
Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours.
-
Add the 2 teaspoons of salt to the pot and continue simmering covered for another 1.5 hours, until the pork is very tender.
-
Remove the pork from the pot and set aside to cool slightly; reserve the broth.
-
In a blender or food processor, puree the quartered onion, garlic, tomatillos, peeled tomato, and roasted green chiles until smooth.
-
Heat the cooking oil in a large skillet over medium-high heat.
-
Pour the pureed vegetable mixture into the hot oil and fry, stirring frequently, for 5 minutes to deepen the flavor.
-
Stir in the chopped cilantro and 1 cup of the reserved pork broth; season with additional salt and pepper to taste.
-
Slice the cooked pork loin and add it to the skillet with the green sauce.
-
Simmer gently for 30 minutes to allow the pork to absorb the flavors of the sauce.
-
Serve hot with rice or boiled potatoes.
