Trim fat from pork. Cut crosswise into 1-inch-thick slices. Place each slice between two pieces of plastic wrap. With the heel of your hand, press and shape each slice as a 1/2-inch-thick medallion. Remove plastic wrap. Sprinkle meat lightly with salt and freshly ground black pepper. Coat an unheated large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add pork; cook about 6 minutes or until pork is slightly pink in center and juice run clear, turning once. Remove from skillet. In a small bowl, stir together cranberry juice, mustard and cornstarch until smooth; add to skillet. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Stir in cherries and pork. Description: "This easy cherry sauce is wonderful over grilled or broiled chicken too."
