Description

This traditional Dominican dish, Arroz con Habichuelas, brings the warmth of Caribbean home cooking to your table. It features tender red beans simmered until creamy, paired with fluffy rice that has absorbed the savory, smoky flavors of cumin, garlic, and onion. The addition of a hint of raw sugar and white vinegar creates a subtle sweet-and-sour balance that defines authentic island cuisine. Perfect as a satisfying side dish for grilled meats or as a standalone vegan main course, it is both comforting and nutritious. Simple ingredients transform into a deeply flavorful meal that highlights the natural sweetness of the beans and the aromatic punch of fresh spices. Ideal for family dinners, potlucks, or when you crave a taste of tropical hospitality without the hassle of complex preparation.

Ingredients

Directions

  1. Sort and rinse the dry red beans, removing any debris. Place beans in a large pot and cover with water by about 2 inches. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until beans are tender but not mushy. Drain any excess liquid, reserving about 1/2 cup of the bean cooking liquid.
  2. In a separate medium saucepan, combine the rinsed rice, reserved bean liquid, and 1 additional cup of water or broth. Bring to a boil, then cover tightly, reduce heat to low, and simmer for 18-20 minutes, or until liquid is absorbed and rice is tender. Remove from heat and let stand for 5 minutes before fluffing with a fork.
  3. While the rice cooks, heat a small amount of oil in a skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the cooked red beans to the skillet with the onions and garlic. Stir in the cumin, salt, raw sugar, white vinegar, Tabasco sauce, and black pepper. Simmer on low heat for 5-10 minutes, stirring occasionally, until the flavors meld and the mixture thickens slightly. Add a splash of water if too dry.
  5. Serve the seasoned red beans over a bed of the fluffy rice. Adjust seasoning with more salt or vinegar if desired.

Note

For best texture, soak dry red beans overnight in cold water before cooking. Discard the soaking water and rinse beans before simmering to reduce gas-causing compounds.

If using canned red beans, rinse and drain them well. Skip the initial boiling step and add the canned beans directly to the skillet with the onions and garlic, simmering for 10-15 minutes to absorb the spices.

The balance of sugar and vinegar is key to authentic Dominican flavor. Taste before serving and adjust according to your preference for sweetness or acidity.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of water or broth to restore moisture.

This dish pairs excellently with grilled chicken, roasted pork, or fried plantains (maduros) for a complete Caribbean meal.
