Sausage Cacciatore
Description
This comforting Sausage Cacciatore transforms simple Italian sausage into a deeply flavorful stew. The sausage is browned for texture, then simmered with sweet Spanish onions, crisp green bell peppers, and earthy mushrooms in a robust tomato sauce. The result is a dish that balances savory meat with the bright acidity of tomatoes and the subtle sweetness of the vegetables. While traditionally a dinner dish, this recipe adapts beautifully for a substantial brunch or a quick weeknight meal. Serve it over pasta, rice, or tucked into crusty Italian bread for a satisfying, home-style experience that feels both rustic and elegant.Ingredients
Directions
-
Remove sausage from casings if necessary and brown in a large skillet over medium-high heat until about three-quarters cooked, approximately 15 minutes.
-
Remove the partially cooked sausage from the skillet and set aside on a plate.
-
Core the green bell peppers and slice them into thin strips.
-
Peel the Spanish onions and slice them into strips similar in size to the peppers.
-
In the same skillet, fry the pepper strips in the remaining sausage grease, adding a little oil if the grease is insufficient.
-
Cook the peppers for about 5 minutes, then add the onion strips and continue frying.
-
Chop the garlic and add it along with the drained canned mushrooms to the skillet, frying for another 5 minutes until vegetables are tender.
-
Return the sausage to the skillet and pour in the Italian tomato sauce.
-
Reduce heat to low and simmer gently for about 10 minutes, or until the meat is heated through and flavors have melded.
