Sebadas
Description
Sebadas are delightful Portuguese pastries featuring tender, slightly chewy dough made with semolina and filled with a rich, tangy ricotta mixture. These golden-brown fried pockets offer a perfect balance of textures: the outer crust is crisp and buttery, while the inside remains soft and creamy. Traditionally served as a dessert or snack, they are best enjoyed warm with a drizzle of honey and a dusting of powdered sugar. Ideal for weekend brunches, festive gatherings, or a special treat for the family, these sebadas bring a touch of European comfort food to your table.Ingredients
Directions
-
In a mixing bowl, combine ricotta, lemon zest, egg, yogurt, and sugar. Stir until smooth and well blended.
-
In a separate large mixing bowl, whisk together the 1 cup of all-purpose flour and the semolina to create a well in the center.
-
In a small saucepan over low heat, warm the milk and butter together, stirring until the butter is completely melted.
-
Pour the warm milk and butter mixture into the well of the flour and semolina. Mix gently, incorporating the dry ingredients from the edges until a soft dough forms.
-
Turn the dough onto a lightly floured surface and knead for 1 minute until smooth. Form into a ball, wrap tightly in plastic wrap, and refrigerate for 1 hour.
-
While the dough chills, heat the olive oil in a 12 to 14-inch frying pan over medium-high heat until it reaches 375°F (190°C).
-
Remove the dough from the refrigerator. On a surface dusted with the extra 1/2 cup of flour, roll out the dough using a pasta roller or rolling pin until it is 1/4-inch thick.
-
Use a round cutter to cut out 20 circles, each 3 1/2 inches in diameter.
-
Place 2 tablespoons of the ricotta filling onto the center of 10 of the dough rounds.
-
Place the remaining 10 dough rounds on top of the filled rounds to create sandwiches. Press the edges firmly together with a fork or your fingers to seal completely.
-
Carefully lower the sealed sebadas into the hot oil. Fry for about 1 minute per side, or until golden brown and puffed.
-
Remove the fried sebadas from the oil and drain on a plate lined with paper towels.
-
Dust generously with powdered sugar and serve warm with a drizzle of honey.
