Ingredients

Directions

  1. Rinse and pick over the dried black-eyed peas, removing any debris.
  2. In a 5-6 quart electric slow cooker, combine the rinsed beans, the undiluted can of bean soup, hot water, chopped carrots, sliced onions, garlic powder, and seasoned salt.
  3. Place the trimmed beef chuck roast on top of the bean mixture.
  4. Press the beef down into the mixture as much as possible to submerge it.
  5. Cover the slow cooker and cook on the Low setting for 9-10 hours, or until the beef and beans are tender.
  6. Increase the heat setting to High.
  7. Stir in the liquid smoke, diced green chilies, and chopped red bell pepper.
  8. Cook, uncovered, on High for an additional 10-15 minutes.
  9. Skim any excess fat from the top before serving.
