  1. Prepare the lemon water bath by mixing the juice of 2 lemons and the flour in a large bowl.
  2. Add 2 quarts of water to the bowl and mix thoroughly to create a cloudy solution that prevents browning.
  3. Wash the artichokes, then bend back and snap off the tough outer leaves until only the tender inner leaves remain.
  4. Slice off the remaining leaves just above the heart, then scoop out the fuzzy choke and any remaining pinkish leaves.
  5. Cut off the stem and peel around the base with a vegetable peeler until you reach the whitish tender part.
  6. Rub each trimmed artichoke all over and inside with a salted lemon half to prevent discoloration, then drop it into the lemon water mixture.
  7. Remove the outer jackets from the fava beans, sprinkle with salt, and let stand for 5 minutes.
  8. Remove the skins from the fava beans, rinse them, and set aside.
  9. Heat 1 cup of olive oil in a skillet over medium heat.
  10. Add the chopped onions and 1/2 teaspoon of salt, sautéing for 5 minutes until softened.
  11. Stir in the fava beans and rice, cooking for 5 minutes while stirring constantly.
  12. Add 1/2 cup of water, cover the skillet, and cook for 5 minutes until the water is absorbed.
  13. Stir in the chopped dill and remaining salt, then remove from heat and let stand covered for 15 minutes.
  14. Remove the artichokes from the water bath and pat dry.
  15. Stuff each artichoke heart generously with the fava bean and rice mixture.
  16. Arrange stuffed artichokes in a baking dish, drizzle with the remaining olive oil, and bake at 375°F (190°C) for 20-25 minutes until tender.
  17. Garnish with lemon wedges before serving.
