  1. Rinse pan with COLD water (DO NOT DRY) - pour in milk and bring to a boil over medium heat.
  2. Stir in rice and return to a boil.
  3. Reduce heat and simmer =uncovered= until rice is tender 30-45 min.

  5. Meanwhile in small bowl combine cream, sugar, egg yolks, vanilla and salt, mix or beat lightly.
  6. Set aside.
  7. When rice is thick and tender

  11. Remove from heat and pour into a 2-quart serving bowl.
  12. Sprinkle with cinnamon or nutmeg.
