  1. Cut the chicken breast into bite-sized cubes.
  2. In a bowl, mix the rice wine (or sherry), light soy sauce, and salt. Add the chicken cubes and toss to coat. Let marinate for 10 minutes.
  3. In a separate shallow dish, beat the egg. Place the cornstarch in another shallow dish.
  4. Dip each chicken piece first in the beaten egg, then coat thoroughly in the cornstarch, shaking off any excess.
  5. Heat about 1/2 inch of oil in a wok or deep skillet over medium-high heat until it reaches 350°F (175°C).
  6. Fry the coated chicken pieces in batches until golden brown and cooked through, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  7. While chicken fries, prep vegetables: dice bell peppers and carrot into small pieces, and slice scallions.
  8. Drain the canned pineapple chunks (or segment the fresh orange).
