  1. Rub the inside of a heavy saucepan or fondue pot with the cut side of the garlic clove, then discard the garlic.
  2. Add the dry white wine to the pot and heat over low heat until small bubbles rise to the surface; do not let it boil.
  3. Stir in the lemon juice and mix well.
  4. Toss the shredded Swiss and Gruyère cheeses with the cornstarch in a bowl until evenly coated.
  5. Gradually add the cheese mixture to the wine, about 1/2 cup at a time, stirring constantly with a wooden spoon over low heat until fully melted and smooth.
  6. Stir in the kirsch (or sherry), salt, and white pepper until combined.

If the fondue becomes too thick during serving, stir in 1/4 to 1/2 cup of heated dry white wine to loosen the consistency.
